Vegetarian Recipe for a Kid



This vegetarian recipe for a kid will appeal to kids and adults alike:


EASY FRUIT TARTS

-1 package puff pastry shells, thawed

-mascarpone cheese

-fresh or canned fruit

Take the puff pastry shells and roll them with a rolling pin to flatten and enlarge until they are about 1/8th of an inch thick and 4-5 inches in diameter. (You can use plain puff pastry dough if you can't find shells.)

Spread the dough with mascarpone cheese (you could use cream cheese or ricotta cheese mixed with a little vanilla extract and sugar, if you can't find mascarpone--which is like a sweet Italian cream cheese.)

Top with fresh or canned fruit of your choice. I used canned cherries, pears and apricots and fresh kiwi for the examples above because I made them in the winter. If it was summer, I would have used fresh peaches, plums and strawberries. Any fruit will work nicely.

Bake according to package directions.

These tarts make wonderful after-school snacks, lunch time treats, or healthy desserts. Enjoy!
