Healthy Lunch Recipe
for a Kid



This healthy lunch recipe for a kid will leave your child wanting more:



POTATO LATKES

- 1 package shredded hash-brown-type potatos (or make your own)

- 2 eggs

- salt and pepper

- 1/4 to 1/2 cup flour

Mix all together in a large bowl and drop dollops of mixture into a hot, buttered skillet. Flatten with a spatula and cook until golden brown on one side. Flip and cook other side. Serve while hot (although they are good cold and re-heated too.)

Variations: Latkes are also called Potato Pancakes or Roesti. A variation of the recipe above is made in many parts of the world because they are so easy, nutritious and delicious.

You can add chopped onions to the mixture, or try grating a little zucchini and/or carrot into the mixture for an even healthier treat.

Latkes are traditionally served with sour cream or applesauce on the side.

But you can try jams or jellies and powdered sugar for a sweeter treat, or chutneys, relishes or green onions for a more savory treat.

You could also add dried or fresh herbs to the mixture and some grated parmesan cheese...yummy.

Any way you make them, these are sure to be a hit!
