Healthy Breakfast Recipe
for a Kid



Here's a healthy breakfast recipe for a kid that's also fun to eat:


DOUBLE-DECKER FIESTA EGG

-1 egg

-2 slices bread (sourdough, whole grain, etc.)

-grated cheddar cheese (or jack, or pepper cheese)

-jarred salsa

Cut a hole in the middle of one of the slices of bread.

Butter a skillet and place both slices of bread in it. On what will be the bottom slice, sprinkle the cheese and salsa to cover it. On what will be the top slice, crack an egg into the hole. Let both slices cook until the cheese has melted and the egg has set. Be careful not to burn the bottoms.

With a spatula, lift the top slice with the egg and place it on the bottom slice so that the melted cheese is now in the middle, and serve. Ole!

Variations: You may add sour cream, avocado slices, green onions or tomato as toppings. You might also like to put some ham in the middle layer with the cheese.
