EASTER RECIPE: SPRING CITRUS COOKIES
These beautiful pastel easter egg cookies celebrate spring in a tasty way! Just make a simple sugar cookie and decorate with citrus flavor and coloring. You won't be able to hide these eggs!
For Cookies:
- 1 1/2 cup sugar
- 2 sticks of butter
- 1 egg
- 1 tsp. vanilla
- 2 1/2 cups flour
- 1 tsp baking soda
First, cream together the sugar and butter. Add the egg and vanilla, and then mix in the flour and baking soda until a nice dough forms.
Refrigerate the dough for 20-30 minutes and then roll it out to about 1/4 inch thickness evenly. Use cookie cutters to make desired shapes (in this case, egg shaped is nice.)
Bake at 375 degrees 8-10 minutes until lightly golden. Allow to cool completely.
For Icing:
- 1 each, orange, lemon and lime (you will use the juice and the grated rind)
- 1 1/2-2 cups powdered sugar
- food coloring
- 1 tsp vanilla
- 2 Tbs. melted butter
- 2-3 Tbs. milk
Mix all ingredients until you get a firm-creamy consistency, adding more sugar if runny, or more citrus juice if too firm. Divide icing into three bowls. Add a drop or two of orange food coloring to one bowl and squeeze a few teaspoons of orange juice and also 1 tablespoon of grated orange rind into it. Mix thoroughly.
Do the same thing with the lemon and lime bowls, using their respective rinds and yellow and green food coloring. Now, ice the cookies with the orange, lemon and lime icings. Allow to set up completely.
Note** You can further decorate these cookies with standard sugar cookie decorations like sprinkles, silver balls, different colored icings and so on. Have fun with your kids and make this delicious Easter recipe for Spring Citrus Cookies as much a tradition as dying eggs!
